I love all the fruit that is around this time of year and strawberries are my absolute favourite. I’ve wanted to try these cupcakes for a while so when I saw English Mum was hosting a Big Bakeoff, I thought I’d use them as my entry.
These are vanilla cupcakes with a fresh strawberry in the middle topped with strawberry and white chocolate buttercream. They were yummy and were all gone by the end of the day!
By the way, taking pictures of cupcakes in hot sunshine leads to very runny buttercream. Doh!

@ TheMadHouse Yes, cut out the centre and put the strawberry in and then cover with a little bit of the cake top.

They look stunning – I love seeing real fruit on cupcakes – it cuts through the rich icing nicely. What a bonus getting a strawberry inside too!

I totally agree. Despite the richness of the buttercream, it didn’t seem to sickly sweet and I’m sure that it’s because it is teamed with the fresh fruit. x

Wow, these look absolutely amazing! I’ve just discovered your blog so am just reading through some old posts to see all the lovely things you have made. I’m really new to baking and am always on the look out for new recipes to try – I love the idea of the Bake It club, will definitely be giving that a go soon 🙂
