Sometimes we just really fancy a quick delicious pudding and this is one of my favourites that only takes about 5 minutes to make in the microwave.
I don’t usually measure my ingredients for the butterscotch sauce I just melt about 25g butter, 75g soft brown sugar and a tablespoon of golden syrup in a saucepan then take it off the heat and stir in a couple of tablespoons of double cream. Next time I make it I will measure more carefully and update this post!
To make the sponge mix together 50g butter, 50g caster sugar, 50g self raising flour, 1 dessert spoon cocoa powder and 1 egg. Add a couple of spoonfuls of the butterscotch sauce and pour the mixture into a greased microwaveable pudding basin. Heat on high heat for about 3 minutes (check after this time as it may need longer). Serve with he remaining butterscotch sauce and cream or ice cream. Quick and yummy! 🙂
