Now I have decided to go for it and start my own cake business I have set about testing recipes. The first ones I tried were chocolate and mint, with chocolate and green coloured mint cake batter swirled together. Hubby said they looked like snot, but they tasted good. I sent some into Grace’s nursery and came out with an order for a birthday cake later on in the year!

Next I made some lemon and poppy seed cupcakes, which have to be my fave at the moment. Along with lemon rind and poppy seeds, I added some lemon curd to the cake mix and it turned out very lemony and moist.

I’ve also been experimenting with the decoration as I can never quite get the buttercream swirls looking right. I think this picture shows better the different ways I tried – let me know what you think!
